For me,
this is the hardest resolution of all to talk about. There are so many ways to eat
healthier. Gluten free. Sugar free. White bread free, to name just a few. The
Mr. probably says it best, though neither of us abide by this advise. “Eat less
and move more.” Also drink lots and lots of water. The colder, the better.
Many
years ago I read a article about Biosphere 2, a self-contained human terrarium
near Tucson, Arizona. The experiment's implications for colonizing desert
terrains and maybe in the long run Mars was amazing, but what caught my
attention was the salad they made from foods grown in the terrarium, which they
claimed would prolong life. I don't know if that's true, and I don't remember
all the ingredients of the original salad, but we ate it for months after.
Today we bought a package of bagged salad reminding me of that yummy delight.
Shred
cucumber and carrots. Add chopped cabbage, broccoli, cauliflower, Kale,
Brussels sprouts, chicory. Mix in dried cranberries or raisins, roasted pumpkin
seeds and a dash of poppyseed dressing. Serve and enjoy.
Do you
have a favorite recipe that makes you look at your diet in a different way? The
daughter does the cooking at my house, but I'll bet I can talk her into trying
every recipe you suggest. And don't forget to eat less, move more and drink
lots of water.

Susan, I remember Biosphere 1 and 2. I think it was two when they lived there for a little over two years. I definitely had visions of going to Mars on the next spaceship after that. Alas, we are not there yet.
You are now the second person to mention salads. I really have to get back into the salad habit. I've always loved them, but somehow I let it get away from me. Thanks!
Su, do you always buy bagged salad or chop your own? In winter, we only buy bagged. Also eat lots of soups. How much does your winter/summer menu vary?
Su, That salad is chock full of everything I like! I may have to make up a batch and eat it for lunch everyday. I find it hard to drink cold water in the winter. I tend to drink green tea all day but in the summer I drink ice water all day.

Chicory? Hmm, I've never had it in a salad, only in coffee next to my beignets at Cafe du Monde in New Orleans. Which I probably shouldn't mention as we resolve to eat healthier in 2013!
What happened to Biosphere 2?
Hi everyone. Went to the 2 yo granddaughter's bday party, the had to work, but thought I'd stop in before hitting the sack.
Jessie, I believe Biosphere 2 is a museum now, and maybe research center, but no one lives there on a perm basis anymore.

Pollidog, the daughter and I are having this same discussion. Right now we're buying bagged salad, but talking about buying separate ingredients and cutting it up ourselves. There is really no difference in my winter and summer diets, except we might eat more spaghetti and stews in the winter.
Paty, I'm not so good at iced water either, but I'm trying to drink more water just to stay in practice.
